Our reserve cab is always our big gun and the 2010 is no exception. We always cherry-pick our favorite cab barrels for this 100% cab blend. The majority of them come from Catherine's block at Dineen Vineyard. Our rows are right at the top of the crest where the soil is extremely shallow & rocky, leaving the vine to eek out an existence producing 1.5 tons of fruit per acre. We always feel very sad for them, but the byproduct is pea-sized fruit that's over the top with concentrated flavor. When the pick day comes for the Cat's Cab we know we're in for a workout because the fruit is so dense; we can barely punch down the must in the fermentor. 75% new French oak was used during the 20 month barrel ageing.
